Genuine Alsatian clones only arrived in the early 1990s, planted across three blocks at Sisters, the estate's lowest site. Pinot Noir and Pinot Gris were already there, and this addition completed the trio the vineyard is named for. Fruit is hand-picked, destemmed, pressed and sent to small stainless steel tanks, then given three to four times the lees ageing most of the region allows, with full malolactic and 11 months before bottling. Jason Lett says the long lees contact pulls richness in while releasing fruity esters back out of the yeast hulls over the later summer months.\u003c\/p\u003e\n\u003cp\u003eFull and fresh at once, at modest alcohol: white peach, quince, almond and a creamy, mineral finish. Serve at 10 to 12 degrees.
