The seven-acre vineyard holds three clones, Wadenswil, Pommard and Upright, all own-rooted and planted between 1965 and 1974, on a south-facing slope that rolls east to west and rises to 125 metres. Farming is organic and regenerative, aimed at keeping the soil life that supports vines this old. It is one of five identically made bottlings tracing the Dundee Hills from 67 metres up to 260. Destemmed, naturally fermented in 11-hectolitre open-tops, hand-plunged twice daily, then 23 months in barrique and foudre, 12 per cent new.\u003c\/p\u003e\n\u003cp\u003eDeep and classical, with red and black cherry, dried rose, tea leaf and forest floor, carried on fine tannin and long acid. Serve at 15 degrees, decanted.
