Théo Dancer's earlier bottlings came from young vines at Nantoux, in the Hautes-Côtes de Beaune; from 2022 he has worked instead with old-vine Aligoté in Meursault, a more powerful terroir that has changed the wine considerably. It is handled in the same way as the Vincent Dancer whites, fermented and raised in large-format barrel over the winter, then rested in vat before bottling. There was a single racking and the barest addition of sulphur at bottling. The wine is pulpy and generous, with more depth than the appellation would suggest, and finishes long and racy.\u003c\/p\u003e\n\u003cp\u003eBest drunk within two or three years.
