From 2022 he has worked with this old-vine Aligoté in Meursault, and the change in fruit source lifted the wine considerably. It is handled exactly as the Vincent Dancer whites are: natural fermentation with all its lees, no bâtonnage, maturation in large-format barrels over the winter, then a rest in vat, a single racking and bottling without filtration. Aligoté responds well to this hands-off treatment, keeping its natural acidity while the lees contribution adds weight.
