Dancer sources his Savagnin from a conscientious farmer in Rotalier, the same southern Jura commune as Ganevat and Julien Labet, where the vines sit on chalky clay over Bajocian limestone subsoil. The winemaking is straightforward and aimed at purity: the fruit is direct-pressed into large oak barrels, with no racking until fermentation has finished, followed by a settling period in stainless steel before bottling. The result is a racy, low-pH wine with good texture, drive and length.\u003c\/p\u003e\n\u003cp\u003eReady to drink and likely to hold for five years or so.
