The vineyards are farmed by hand at low yields on hard, dark schist rather than the limestone of the middle Loire, which gives the wine a firmer and more mineral frame. Grapes are picked ripe in successive passes, pressed slowly, fermented with indigenous yeast in barrel and left on fine lees for a long elevage with little intervention and restrained sulphur.
