Clos de la Hutte is one of the walled parcels Thibaud Boudignon farms there, worked by hand at low yields and picked in successive passes as the fruit ripens. The wine is pressed slowly, fermented with indigenous yeast in barrel and raised on its fine lees for a long elevage, then bottled dry with minimal sulphur.
