Chenin Blanc is the only grape permitted, and the combination of southern exposure and river-cooled nights produces dry wines of unusual structure and longevity. Thibaud Boudignon works his parcels here organically, with ploughing, hand pruning and picking in successive passes to bring in fully ripe but clean fruit.
