Each year a small parcel is set aside and kept for six years before it goes out. He describes the wine as a spring that slowly unwinds, revealing light toast and hay along the way, with the best vintages continuing on that path for fifteen years and more, and six years in, the transformation is underway. The vineyard itself was planted in 1969 on the sandy alluvial flats of Hermitage Road, Pokolbin, where deep free-draining loam over an old sea floor lets the roots go down and gives the wines their famous longevity.\u003c\/p\u003e\n\u003cp\u003eSavoury on opening, then toast, citrus, salt, mineral and woodsmoke unfold slowly across a textured palate with rounded acid and well-knit phenolics.
