Fermentation ran long and cool, and was halted at about 10 per cent alcohol, which leaves roughly 145 grams per litre of residual sugar in the finished wine. Stainless steel throughout, no oak, so the sugar sits against Semillon's natural acidity with nothing in between. Thomas began making this style only recently, the 2023 being the third release, and he treats sweetness as a question of balance, not weight. Hunter Semillon has the acid line to carry it.\u003c\/p\u003e\n\u003cp\u003eDates, honey and candied citrus, thick in the mouth but pulled straight again by orange-peel acidity. Serve it cold, around 8 degrees, in a small glass.
