Most of the sites Andrew Thomas picks for Semillon are on light, sandy soils; this one is the exception, red and volcanic, and it gives a rounder, riper wine than the rest of the range. Fermentation happened in stainless steel, followed by a few weeks on lees before bottling, with no oak anywhere. Thomas came to the Hunter from McLaren Vale, spent years at Tyrrell's, and has been bottling single-vineyard Semillon under his own name since 1997.\u003c\/p\u003e\n\u003cp\u003eLemon and grapefruit with a chalky edge, fuller in the mouth than most young Hunter Semillon. Serve it at 9 to 10 degrees.
