Andrew Thomas has had three decades in the Hunter to learn when to do that. The fruit, off 1969 vines on clay-loam at Pokolbin Estate, was picked late in February and fermented on skins for eight days before pressing to French hogsheads, a fifth of them new, for sixteen months. Ten more months in bottle followed. Thomas calls this the introvert to Sweetwater's extrovert.\u003c\/p\u003e\n\u003cp\u003eRestrained on the nose and medium-bodied in the mouth, with dark plum, earth and fine-grained tannin carrying a long finish. Serve at 16 degrees after half an hour open.
