Pre-fermentation maceration ran one to two days cold, vinification was in stainless steel, and malolactic conversion happened after racking to barrel. Fifteen months in 300-litre French hogsheads followed. None of this differs much from what Andrew Thomas does with his top reds; the difference lies in which barrels get chosen for which label.
