Since 1993 it has been owned by the Álvarez family of Vega Sicilia, whose investment restored both the vineyards and the labyrinth of cellars cut into the volcanic rock. Making aszú is laborious work: pickers pass through the vines repeatedly, taking only berries shrivelled by noble rot, which are then macerated in base wine, pressed, and aged for years in Hungarian oak.
