Grapes are hand-picked and fermented with a portion of whole bunches for perfume and savoury complexity, following the same approach as the Tonic Grenache. After fermentation the wine is left largely alone in old barriques and puncheons, topped up regularly, then racked and sulphured just before bottling. Barry rates Mataro as the star variety of the Barossa Valley.\u003c\/p\u003e\n\u003cp\u003eGive it a short decant and serve at around 16 to 18 degrees.
