Half the bunches went in whole, the rest destemmed, and fermentation started on its own in open-topped wooden vats. Twenty-three days on skins is a long soak for Pinot, and it shows in the texture. Pressing went to French oak, a fifth of it new, for eight months, and the wine was bottled without fining or filtration. The site has been planted since 1995 and crops lightly by nature.\u003c\/p\u003e\n\u003cp\u003eRose petal, plum and earth over fleshy fruit, with powdery tannin and a long sour-cherry finish. Serve at 14 to 15 degrees, cooler than you might think.
