Malolactic conversion was blocked, and the wine sat ten months on lees in barrel before bottling. That was Kaspar Hermann's second harvest at the property; he arrived from Mount Mary and set about letting the site speak instead of imposing a house style. The vineyard has been in the ground since 1995, on fine clay loam against the Toolangi State Forest, and crops low without being pushed.\u003c\/p\u003e\n\u003cp\u003ePink grapefruit drives it, with unexpected intensity for the money and a long, dry finish. Serve at 11 to 12 degrees.
