Good winter rain had left the vines with full, healthy canopies by the end of spring, and the fruit ripened slowly. Crushing and pressing went straight into French barriques, puncheons and a foudre, a tenth of it new wood, for primary fermentation, with partial malolactic conversion following and eight months on lees. The vineyard itself dates from 1995, sits on fine clay loam in Dixons Creek and backs onto the Toolangi State Forest.\u003c\/p\u003e\n\u003cp\u003eCitrus and white peach with a chalky, cool-climate finish and moderate weight. Serve at 12 degrees.
