Picking happened on 2 March; the grapes were destemmed and pressed to French oak with a tenth new, fermented on lees and left nine months in barrel. Kaspar Hermann has built his reputation on Chardonnay, working from low-yielding Gingin, Mendoza and I10V3 plantings that average twenty-three years of age on fine clay loam. The vineyard sits deep in Dixons Creek against the state forest, which keeps nights cool and the acid intact.\u003c\/p\u003e\n\u003cp\u003eStone fruit and citrus with real regional charm, generous but held together by cool-climate acidity. Serve at 12 degrees.
