Half the fruit went in as whole bunches after a short cold soak, and fermentation was wild. Twenty-five days on skins is a long maceration, which builds structure without needing much oak, and the wine spent eight months in French barrels with a fifth new before bottling unfined and unfiltered. This was the first release under Kaspar Hermann, who came to Toolangi from Mount Mary and shifted the emphasis toward freshness.\u003c\/p\u003e\n\u003cp\u003eDark cherry and forest floor with a fine, drying tannin frame and good length. Serve at 14 degrees.
