Sixty per cent of the fruit was left as whole bunches and the rest as whole berries, cold-soaked briefly, then fermented by wild yeast. Four weeks on skins followed, a serious maceration by Pinot standards, before pressing to French oak with thirty per cent new for ten months. Bottling was without fining or filtration. Dixons Creek is a cooler pocket of the Yarra, and the forest edge here keeps night temperatures down.\u003c\/p\u003e\n\u003cp\u003eSour cherry and spice over savoury depth, fine chalky tannin, acidity keeping the whole thing taut.
