Fruit was crushed and pressed directly to barrel with full solids, thirty-five per cent of the wood new, and primary fermentation ran on wild yeast. Malolactic conversion was avoided entirely this year; the lees were stirred for the first six months and the wine spent ten months in barrel before bottling. Height matters here, since the top of the block is cooler and stonier, and the acid arrives in the winery intact.\u003c\/p\u003e\n\u003cp\u003eIntense and tightly wound, citrus and white peach with a flinty edge and a long, chalky finish. Serve at 12 degrees, not colder.
