They crop lightly and hold their acidity, which is the reason they are picked and made separately. Fruit was crushed and pressed with full solids straight into oak with twenty per cent new barrels, the fermentation left to wild yeast, and the wine spent ten months on lees. Dixons Creek is among the cooler corners of the Yarra Valley, and the forest at the boundary of the property helps keep nights cold through ripening.\u003c\/p\u003e\n\u003cp\u003ePear and citrus with a nutty edge and a dry, powdery close, medium-weighted and clean throughout. Serve it at around 12 degrees.
