Twenty-one days on skins, then nine months in French oak with fifteen per cent new, and bottling without fining or filtration. Dixons Creek is cool, and the forest boundary keeps it cooler still through the nights.\u003c\/p\u003e\n\u003cp\u003eRed cherry, plum and a savoury earthiness, light on its feet with fine powdery tannin. Serve at 14 degrees.
