Compared with the estate Shiraz there is more whole bunch in the ferment, forty per cent, and a touch more new oak at fifteen per cent; otherwise the handling is identical, with a natural ferment, plunging as needed, ten months in barrel and bottling without fining or filtration. Yarra Shiraz was medium-weighted and perfumed long before the fashion came back around, and the picking and winemaking here have both been reoriented around freshness.\u003c\/p\u003e\n\u003cp\u003eMedium-weighted and peppery, with dark berry, dried herb and a fine sinewy tannin line. Serve at 15 to 16 degrees.
