Pressing went to French barriques and puncheons with under ten per cent new oak for malolactic conversion, followed by ten months on lees in barrel. Hermann's method is to let site and season set the style, not to chase one.\u003c\/p\u003e\n\u003cp\u003eCherry and cranberry with a spicy, earthy undertow, fine tannin and a long, fresh finish. Fourteen degrees is the mark, and a wide glass helps.
