Ten per cent went in as whole bunches and the rest as whole berries, fermenting naturally in a mix of open and closed vessels, and the wine then spent ten months in French oak on lees. The vineyard has been planted since 1995 on fine clay loam in Dixons Creek, up against the Toolangi State Forest, and the Shiraz here is grown for freshness and perfume more than for weight.\u003c\/p\u003e\n\u003cp\u003ePeppery and medium-bodied, with dark berry, dried herb and fine tannin. Serve at 16 degrees.
