The Tornatore family farms on the northern flank around Castiglione di Sicilia, in the contrade that give the mountain its most sought-after reds. Nerello Mascalese is the principal red grape here, thin-skinned and late ripening; picked for rosato it gives a pale, dry style that owes much to the altitude and the wide swing between day and night temperatures. Fermentation is cool and in stainless steel, without oak, so the character of the mountain is left to speak for itself.\u003c\/p\u003e\n\n\u003cp\u003eServe well chilled, at around 9 degrees, with seafood, charcuterie, grilled vegetables or lighter pasta dishes.
