The heat here ripens the grapes to such high sugar that many of its wines reach their alcohol naturally, without fortification. Toro Albalá has been based at Aguilar de la Frontera since 1922, in a former power station, and holds unusually deep stocks of old soleras. Cream as a category has an old-fashioned reputation, but this version is built on an intricate ten-year-old Oloroso Viejo, aged oxidatively in cask, then judiciously enriched with aged Don PX for sweetness and a small proportion of Fino Lagar for lift.
