The grapes are sun-dried on esparto mats until they shrivel, which concentrates the sugar to extraordinary levels before fermentation is arrested with grape spirit. Toro Albalá sets aside select lots of its best vintage wines for this label rather than blending them into a solera. The barrels are filled, sealed and then left for decades in their single-vintage state, so the wine develops through slow, controlled exposure to oxygen instead of through fractional blending. That long oxidative rest is what brings the nutty, iodine-tinged rancio character and the savoury edge that offsets the sweetness.\u003c\/p\u003e\n\u003cp\u003eEffectively immortal once made, and it keeps well in the fridge for weeks after opening.
