The Don PX wines are Toro Albalá's youngest sweet vintage bottlings. Hand-harvested grapes are laid out on straw mats and left to dehydrate in the sun for about a week. They are then pressed, and when the balance of sugar, alcohol and acidity is right the fermenting must is stunned with aguardiente, the local clear grape brandy, to halt fermentation. The fortified wine is settled in stainless steel and in the large cone-shaped earthenware vessels known as tinajas, and because it is too rich to filter cleanly it is bottled straight from those vessels once it has fallen bright naturally. Neither barrel-aged nor blended, it shows the variety before any rancio character develops.
