An Amontillado begins under a veil of flor, in the biological phase, and continues oxidatively once the flor dies back, which is what gives the style its nutty, savoury character. Toro Albalá works out of a converted power station at Aguilar de la Frontera. Its museum wines are vintage-dated rather than solera-blended, and the Convento Selección label is kept for the finest, oldest and rarest lots in the house, vinified by the first two generations of the family. Wines held this long are intensely concentrated and markedly savoury, and an opened bottle will keep for months at cellar temperature.\u003c\/p\u003e\n\u003cp\u003eReady now and stable for years in bottle.
