Within the museum programme the Convento Selección bottlings sit at the top: produced by the first two generations of the family, they represent the finest, oldest and rarest selections held in the cellars. The grapes are sun-dried to raisins before pressing, so the must starts at an extreme sugar concentration, and the wine is fortified and then left in cask at Aguilar de la Frontera for decades. Evaporation over that time takes a heavy toll on volume and leaves behind something intensely concentrated.
