Toro Albalá, based since 1922 in a former power station at Aguilar de la Frontera, sets aside select lots of its best vintages for later release under the Gran Reserva label. Rather than being run through a solera, these barrels are filled, sealed and left for decades in their single-vintage state. Slow, controlled exposure to oxygen brings on the rancio transformation, adding a nutty, iodine-tinged savour that cuts across the sweet, fruit-cake concentration and lends freshness. As the wine concentrates the colour darkens almost to black and the texture thickens.
