Toro Albala works from Aguilar de la Frontera and holds one of the deepest reserves of old vintage wine in Andalucia. For the Don PX Gran Reserva, select lots from the best years are filled into oak barrels, which are sealed and left in their single-vintage state rather than being refreshed through a solera. Decades of slow, controlled contact with oxygen carry the wine through its rancio transformation, building nutty, iodine-tinged savour alongside the raisined sweetness and lending an impression of freshness unusual in a wine this rich.
