Toro Albalá has worked from Aguilar de la Frontera since 1922. Cream is the sweetened style that gave sherry much of its old reputation, and this is a more serious reading of it than that history suggests: the base is a 10-year-old Oloroso Viejo, aged oxidatively in cask, which is then enriched with old Don PX and a small measure of Fino Lagar. The PX supplies the sweetness and the Oloroso the structure and salinity, and the ten years in wood give a velvety texture that the commercial versions of this style rarely have.\u003c\/p\u003e\n\u003cp\u003eReady now and stable for weeks once opened, it works with almond desserts, coffee and petits fours, or a wedge of Stilton.
