In Montilla-Moriles it is made from Pedro Ximénez rather than Palomino, as every wine in the region is, dry ones included. Toro Albalá selects for it from the heavier, darker casks of Amontillado in its Aguilar de la Frontera cellars, and this bottling averages 25 years in wood. It is bottled en rama, without filtration, which preserves the fine savoury texture that is the point of the style, and the finish is dry despite the concentration.\u003c\/p\u003e\n\u003cp\u003eServe at 13-14°C in a small glass and finish within a month of opening.
