Verdeca is an indigenous variety closely associated with this part of southern Italy, and here the vineyards sit at 300 to 400 metres above sea level, where elevation brings an important element of freshness to Puglia’s otherwise warm Mediterranean growing conditions.\u003c\/p\u003e\n\n\u003cp\u003eThe vines are planted on clay-limestone soils and trained using the cordon system. Harvest takes place in early September, followed by gentle pressing and temperature-controlled fermentation.
