The Haitian portion here is made agricole-style, from sugar cane juice instead of molasses. The Jamaican half comes from Trelawny Parish, where long wild fermentation produces a high-ester spirit with plenty of funk. Every component was pot-distilled, and nothing has been aged, so the cane and the ferment are on full display. White rum of this kind is a very different proposition from the aged stuff.\u003c\/p\u003e\n\u003cp\u003eAromatic and unusual, green olive, marzipan, earth and overripe mango, then briny and slightly oily in the mouth, dry, with hay, fennel and pepper on the finish.
