The Reserve is destemmed and fermented in vat with a gentle extraction that favours perfume over weight, then matured in oak barrel with only a small proportion of new wood so that the fruit stays in front. The result is a mid weight red with fine, sinewy tannin and the firm acidity that runs through everything the house bottles.
