Trimbach has been based in Ribeauville since 1626 and the estate is now run by the thirteenth generation of the family. The style is uncompromisingly dry: whole bunch pressing, fermentation taken out to full dryness, ageing in large neutral oak foudres and stainless steel with no new wood, then extended time in bottle before release.
