The variety gives a quieter, drier and more overtly mineral wine than Riesling, with lower aromatics and a stony finish, and it rewards older vines on limestone and clay. Trimbach have now converted all of their vineyards to organic farming. The wine is whole bunch pressed and fermented cool in stainless steel with no oak and no malolactic fermentation, in keeping with the house style, and finished at under 1 gram per litre of residual sugar, which is about as dry as Alsace gets.\u003c\/p\u003e\n\n\u003cp\u003eBone dry and understated, it is a natural match for oysters, charcuterie and asparagus; serve at 8 to 10 degrees.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
