Stony, clay-bearing vineyards at moderate altitude catch warm air from the Orcia valley and cool off at night under Monte Amiata, so the fruit ripens fully and keeps its acidity. As the DOCG requires, it is all Sangiovese Grosso, fermented on skins for several weeks, then aged at least two years in French tonneaux and large casks before the required bottle ageing.\u003c\/p\u003e\u003cp\u003eFull-bodied and generous: dark cherry, leather and dried herbs held by firm tannin. Decant an hour ahead and serve at 17–18°C with braised beef, game or hard sheep's cheese.
