This wine is a selection of plots there, averaging 35 years of age and 500 metres in altitude, rooted in blue slate, shale or schist. Because the parcels face in different directions they ripen at different times, so Valdesil harvests and vinifies each one separately. The older plantings crop at around 22 hl\/ha and were grafted from the estate's Pedrouzos vineyard, planted in 1885. Every parcel is picked by hand and fermented with wild yeasts, then blended and held for six months sobre lías — on lees — in stainless steel. That gives a wine with more flesh and texture than the entry bottling while keeping the chalky precision and the thread of acidity that mark good Valdeorras.\u003c\/p\u003e\n\u003cp\u003eDrink it over the next three to four years with grilled fish, pork loin or fresh goat's cheese.
