Bodegas Valdesil is a Gayoso family estate whose name rests on its Godello holdings, including the Pedrouzos vineyard planted in 1885, and the Mencía is handled on the same terms. The fruit comes from old bush vines set between 500 and 550 metres on south-facing, slate-rich slopes around the village of O Moullón, in the mountains at the eastern limit of the appellation. Grapes are picked by hand and fermented with indigenous yeasts in temperature-controlled stainless steel, then aged about eight months, again in steel. There is no oak, which leaves the slate character and the variety's savoury, herbal edge unmasked.
