Valli, founded by Grant Taylor and now made with Jen Parr, sees intense fragrance, savoury undertones and electric energy as the hallmarks of this site. The 2022 is a translucent garnet, with wild strawberry, pomegranate and pomelo alongside wild thyme, cedar and gunflint. The palate brings cardamom, allspice, damson plum and tart cherry, with fine tannins, great persistence and a distinctive salty finish.\u003c\/p\u003e\n\u003cp\u003eSlightly cool is ideal, around 14 to 16 degrees, to keep its freshness. Try it with seared tuna, duck breast with plum or a mushroom and gruyère tart.
