It is built from the finest Cabernet Sauvignon on the estate, with Malbec adding perfume and plushness, and is matured in French oak and released only after extended time in barrel and bottle. The 2021 shows a ruby-garnet colour with a hint of brick, and a tight, layered perfume of boysenberry, blue plum and orange peel with lavender and potpourri. A velvety texture sits over a fine-boned structure, and the finish lingers with white pepper, cedar and wet stone.\u003c\/p\u003e\n\u003cp\u003eDecant for an hour or two and serve at around 17 degrees. Pair it with a standing rib roast, slow-braised lamb shanks or an aged Comté.
