The base wine is picked early to preserve acidity and fermented dry, then given a second fermentation to create the bubble and held on lees for a period that builds a fine bead and a light bready character. Chardonnay suits this treatment because its own flavours are restrained enough to let the lees character and the acidity carry the wine.
