Either route gives the pale salmon to light cherry colour and the touch of red fruit and gentle tannin that separates a rosé from a blanc de blancs. The base wine is fermented dry, given its bubble by a second fermentation and aged on lees, which softens the fruit and builds a finer bead before the wine is finished brut.
