Nebbiolo ripens late, holds firm tannin and high acid, and needs long ageing. The estate ferments with native yeast in a mix of vessels and matures the wine in large Slavonian oak casks before bottling.\u003c\/p\u003e\u003cp\u003eDecant an hour ahead and serve at 17 degrees with braised beef, risotto or aged cheese.
